The prevalence of patients infected with Staphylococcus aureus resistant to Methicillin has different problems of nosocomial infections disease in addition to multidrug resistance. The aim of this work is to evaluate the antibacterial effect of different polyphenolic extracts of honey collected from different regions of the Algerian territory on the one hand and the study of the physicochemical quality, microbiological and pollen analyses on the other hand. The results clearly show the sensitivity of Methicillin Resistant Staphylococcus aureus against our polyphenolic extracts. This inhibitory effect was found for the four samples tested with varying degrees of success with the polyphenolic extract of Jijel is the inhibitor. This activity is linked not only to the type of polyphenols extracted but also the type of honey as honeydew honeys are more effective than nectar, and the botanical origin.
